Birchwood Pitlochry (formerly Saorsa 1875) – A New Chapter in Highland Hospitality

Pitlochry, Scotland – 01 October 2025 – Birchwood Pitlochry is delighted to announce the acquisition of Saorsa 1875, effective from 01 October 2025.

Located in Pitlochry – gateway to the Highlands, Birchwood Pitlochry will build a reputation as a unique destination, in a beautiful building with surrounding gardens and mature woodland for travellers seeking locally sourced food, sustainable hospitality, and a relaxed yet luxurious approach to service in the Scottish Highlands.

At Birchwood Pitlochry, will also focus on creating experiences that are relaxed, luxurious, and deeply connected to the Highlands. From the moment guests arrive, every detail of their stay will be carefully taken care of, allowing them to simply unwind, indulge, and explore.

To help guests make the most of their time in Scotland, Birchwood has curated a collection of half-day and full-day itineraries known as the Birchwood Explorer Guide. Many of these routes are based on the owners’ own adventures and favourite local spots, offering insider recommendations for an authentic Highland experience.

Dining will be a highlight of the Birchwood experience. Guests can start the day with locally sourced award-winning smoked salmon and scrambled eggs, enjoy a champagne afternoon tea to mark a special occasion, or return from the Pitlochry Festival Theatre to a delicious, seasonal & locally-sourced light supper.

Footnote to guests with existing Reservations at Saorsa 1875 in 2025

While ownership has changed, guests with existing bookings can be reassured that the plant-based ethos of Saorsa 1875 remains unchanged in the short term. Bedrooms will remain vegan-friendly, a vegan breakfast will continue to be available, and the evening vegan dining offering will remain, though in a simplified format. The hotel will maintain the same high standards of service, comfort, and hospitality that it has become known for.

Looking ahead, Birchwood Pitlochry will continue to provide a simple yet strong vegan-friendly food and stay offering. From late 2025, the hotel will also become open and welcoming to visitors of all dietary lifestyles and preferences, reflecting an inclusive and global approach to hospitality.
